Hash Brown Quiche (5 Points Plus)

Serves 3

  • 1.25 cups Shredded Hash Brown Potatoes
  • 2/3 Tbsp Butter, melted
  • Salt and Pepper to taste
  • 2/3 tsp Olive Oil
  • 1.5 cups Brocolli Florets, chopped into small pieces
  • 1/3 Onion, chopped
  • 2 Eggs
  • 2 Eggs White
  • 2/3 cup Fat Free Milk
  • 2/3 cup  Shredded Low Fat Cheddar Cheese

Preheat oven to 450 degrees.

Using a paper towel, squeeze any excess moisture from the hash browns.

The mix together with the 1 egg and melted butter.  Season with salt and pepper.  Press into a 6″ pie plate to form the crust and bake for 20-25 mins until golden brown.

Meanwhile, add 2/3 tsp olive oil to a non stick skillet.  Add the broccoli and onions and saute for about 10 mins until soft.

Whisk together the remaining egg, egg whites, milk, salt and pepper.  Fold in the broccoli, cheese and onions.  Pour into the pie plate over the hash brown crust.

Bake for about 30 mins until eggs are fluffy and beginning to brown.

Two servings are for dinner today.

One additional serving is for lunch on Tuesday
