Quick Chili (6 Points Plus)

Quick Chili 3

Serves 3

  • 2/3 lb Lean Ground Beef
  • 1 Garlic Clove, minced
  • 1/3 Onion, Minced
  • 1 Tbsp Tomato Pasta
  • 1 Tbsp Chili Powder
  • 2/3 tsp Salt
  • 2/3 Tbsp Ground Cumin
  • 2/3 Tbsp Paprika
  • 8 oz can Pinto Beans, rinsed and drained
  • 8oz can Sweetcorn, rinsed and drained
  • 8oz can Diced Tomatoes in Juice
  • 20 oz Beef Broth
  • Pinch of Cinnamon

In a large pot, add the garlic, onions and beef.  Brown completely.

Quick Chili 1

Stir in tomato paste, chili powder, salt, cumin and paprika.  Cook for another 2 mins, stirring constantly.

Add the remaining ingredients – beans, corn, tomatoes and beef broth.  Simmer for 25 mins.

Quick Chili 2

Taste and season with cinnamon and additional spices if needed.

Two servings are for dinner today

One serving is to used for two lunches later in the week, each using 1/2 cup.
