Beef & Broccoli (6 Points+)

Serves 3

  • 1.5 Tbsp Cornstarch
  • 1/8 tsp Salt
  • 0.6lb Sirloin Beef, thinly sliced
  • 1 tsp Vegetable Oil
  • 2/3 cup Chicken Broth
  • 8 oz Broccoli Florets (3 cups)
  • 2/3 Tbsp Ginger Root, fresh, minced
  • 1.5 tsp minced Garlic
  • 18 tsp Red Pepper Flakes
  • 3 Tbsp Soy Sauce

Toss together the beef, pinch of salt and 1 Tbsp Cornstarch.

Asian Beef 1

Heat the vegetable oil in a non-stick skillet over medium-high heat.  Add the beef and cook for about 4 mins or until browned.  Set aside.

Add 1/3 cup Chicken Broth to the skillet.  Add the broccoli and cook for about 3 mins until just tender.

Asian Beef 3

Add the ginger, garlic and red pepper flakes and cook for 1 more minute.

Stir together the soy sauce, 1/3 cup Chicken broth and 1/2 Tbsp Cornstarch.  Add to the pan and cook for 2-3 mins until sauce begins to thicken.

Add beef to skillet and cook for 1 additional minute.

Set one serving aside for lunch tomorrow.
