Crash-hot Potatoes (2 Points Plus)
Serves 3
12 small, round potatoes
salt
1 tsp extra virgin olive oil
1 tsp sea salt
freshly ground black pepper
1 tsp dried Chives
Heat oven 450C .
Don’t peel the potatoes. Place them a pot of salted water, bring to the boil, and simmer for around 15 minutes until they’ll take a skewer without too much resistance. They should be just about cooked, without being soft.
Drain, and arrange on a cookie sheet lined with baking parchment and lightly sprayed with cooking spray.
Use a potato masher to squash each potato flat, until it is twice its original diameter almost looks like a cookie on the sheet!
Drizzle with olive oil and sprinkle with salt and pepper and dried Chives. I think you could use any herb you like here to compliment your main dish
Bake on the top shelf of the oven for 20 to 25 minutes until crisp and golden. Serve hot.
