It has been months since I was last on here. My daughter in law spoke to me yesterday, she is really struggling right now. She did a blog at one time and it really helped her and she decided today she would start again. I decided the same thing!!!

We both have a Fit Bit and we set a target of 5,000 steps per day and 5 flights of stairs. This is obviously going to increase!!!

I have a pretty busy day at work and didn’t get to leave my desk much, so as soon as I got in from work, I fixed dinner and after headed out for a 30 minute walk. I know it’s not much but it’s a start!! So right now my Fit Bit reads 6345 steps and 8 stairs.

I logged onto Lose It this morning to start tracking. As you can see I have some Easter candy. Those little mini Cadbury Crème Eggs are only 40 calories each!!

Breakfast: 142
Oat Bran Natural Cereal 1/3 Cup
Milk, Nonfat/Skim, 1/2 Cup
Lunch: 330
Premier Protein, Chocolate Peanut Butter (Meal Replacement Bar) 1 Each
Cadbury mini cream egg 1 Serving
Dinner: 552
Chicken tortilla soup 1 Serving
Mexican grilled cheese sandwich 1 Serving
Snacks: 170
Cadbury mini cream egg 2 Servings
Banana, Fresh, Small, 6″ To 6 7/8″ Long 1 Each

Total 1194 calories

Exercise: Walking, 3 mph, moderate 30 Min

The Chicken Tortilla Soup at dinner time was from Costco. A one cup serving is 150 calories which isn’t too bad.

The Mexican Grilled Cheese Sandwich was delicious! I halved the recipe as it is only the hubby and I!!

Mexican Grilled Cheese Sandwich

Mexican Grilled Cheese Sandwich

1 medium sweet yellow pepper, chopped
1 medium green pepper, chopped
2 teaspoons olive oil
8 slices rye bread
2 tablespoons low fat mayonnaise
1 cup fresh salsa, well drained
3/4 cup shredded low fat Mexican cheese blend
2 tablespoons butter, softened

Directions
1. In a small skillet, saute peppers in oil until tender. Spread four bread slices with mayonnaise. Layer with peppers, salsa and cheese. Top with remaining bread. Butter outsides of sandwiches.
2. In a small skillet over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese is melted. Yield: 4 servings.
