Spaghetti and Easy Sauce – 100% Simply Filling (10 Points Plus)

Serves 4

Quick Spaghetti Sauce

  • 8oz High Fibre Spaghetti
  • 1 tsp olive oil
  • 1/2 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 garlic cloves, minced
  • 1/2 Tbsp Italian seasoning
  • 1lb lean ground beef
  • 1/4 tsp salt
  • 16oz can crushed tomatoes
  • 2 Tbsp parsley, finely chopped
  • 1/4 cup Parmesan cheese

Cook pasta according to package directions.

While the pasta is cooking, heat the olive oil in a skillet over medium heat.  Add the onion, carrot, celery and garlic.  Cook for 5-7 mins until onion is tender.

Add the beef, Italian seasoning and salt.  Brown the beef for 5-7 mins until it isn’t pink.

Add the tomatoes and simmer for 5 mins.

Stir in parsley and serve over cooked pasta.

Sprinkle with parmesan cheese.

Serves 2

  • 4oz Brown Rice
  • 1 Tbsp Oil
  • 6oz Turkey or Chicken Breast cut into thin slices
  • 1 carrot, peeled and cut into thin strips
  • 1 small red pepper, chopped
  • 4oz bean sprouts
  • 4 green onions chopped
  • 2oz peeled prawns/shrimps
  • ½ tsp minced garlic
  • 1 Tbsp soy sauce
  • 1 tsp Thai 7-spice seasoning
  • Pinch of brown sugar

Cook rice according to package instructions.  When rice is ready commence with the remainder of the recipe.

Add all the remaining ingredients including the rice, and cook over a medium heat for 2-3 mins, stirring gently all the time.

You may add a little chicken stock or water if the mixture appears to be sticking to the pan, or if you may prefer it slightly less dry.

Taste for seasoning and serve.

Tuna and Sweetcorn Jacket Potatoes – 100% Simply Filling – 10 Points Plus

Serves 2

  • 2 x 10oz Baking Potatoes
  • 2oz Green Beans, cooked and cut in half
  • 1.5oz Sweetcorn Kernels
  • 7oz can Tuna in water, drained
  • 2 Tbsp Greek Yoghurt
  • Salt and Pepper to taste

Scrub and prick potatoes and bake them at 400 degrees for about an hour.

Mix corn, beans, tuna and half the yoghurt.

Cut tops of potatoes, scoop out flesh, mash with remaining yoghurt and seasoning.

Pile back into potato skins and top with tuna and sweetcorn mixture.

Thai Chicken & Noodle Stir Fry – Simply Filling+4WPA – 10 Points Plus

Thai Chicken & Noodle Stir Fry – Serves 2

  • 1/2 Tbsp Honey
  • 1 tsp Brown Sugar
  • 2 tsp Lemon Juice
  • ½ Tbsp Water
  • 1 tsp Soy Sauce
  • 1 tsp Thai 7 Spice Seasoning
  • 100ml Chicken Stock
  • ½ Tbsp Oil
  • 8oz Chicken Breast, cut into thin strips
  • 1 small Onion, thinly sliced
  • 1 Red Pepper, cut into strips
  • ½ tsp garlic Puree
  • 1 tsp Cornstarch blended with a little cold water
  • 4oz Beansprouts
  • 4oz medium Chinese egg noodles, cooked according to package instructions

In a small bowl mix together honey, sugar, lemon juice, water, soy sauce, 7-spice seasoning and stock. Stir well.

Add red pepper and garlic. Stir fry for a further 2 mins.

Add stock mixture, lower heat and simmer for 2 mins. Add cornstarch mixture and stir to thicken sauce.

Toss cooked Chinese noodles in the stir fry for a few seconds and serve.

Chicken & Pasta 3

Serves 2

  • 5oz High Fibre Pasta
  • ½ tsp Olive Oil
  • 5oz Frozen Spinach, defrosted
  • ¼ tsp Oregano
  • ¼ tsp dried Basil
  • ¼ cup reduced Fat Ricotta
  • ½ cup Reduced Fat Mozzarella Cheese
  • 2 servings leftover Chicken Cacciatore, removed from bone with ½ cup Sauce
  • ½ cup diced Italian Tomatoes

Preheat oven to 375.  Spray a small pie plate or 6” x 6” baking dish with cooking spray.

Cook the pasta according to package directions until al dente.  Drain and set aside.   Save ¼ of the pasta (about 1 cup) for lunch later in the week.

Heat a non stick skillet over medium  heat and add the olive oil.  Saute the garlic for about 2 mins and then add the spinach, oregano, basil and diced tomatoes.  Cook for 3-4 mins.  Season with salt and pepper.

Chicken & Pasta 1

Toss together the pasta, leftover chicken and sauce, tomatoes and spinach mixture, ricotta cheese, and ¼ cup Mozzarella.  Pour into baking dish.  Top with remaining Mozzarella.

Chicken & Pasta 2

Bake for about 25-30 mins.
