Baked Seasoned Fries – 100% Simply Filling – 2 Points Plus

Serves 2

  • 1 medium potato, sliced into thin fries
  • 1 large egg white
  • 1/8 tsp oregano
  • 1/2 tsp paprika
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • pinch of chili powder
  • salt and pepper
  • cooking spray

Preheat oven to 400 degrees.  Cover a baking sheet with foil or parchment paper.  Spray with cooking spray.

Mix together all the spices.

All the egg white to a bowl and add the spices.  Beat until frothy and then pour over the potatoes.  Mix so all the potatoes are coated.  Spread in one layer onto the baking sheet trying not have the fries touch.

Cook for about 40 mins, flipping halfway through.  Remove once crispy and cooked through.  Cooking time will depend on the thickness of the fries.

Serves 2

  • 1 medium Sweet Potato, sliced into thin fries
  • 2 tsp Cajun Spice or fave seasoning
  • Cooking spray

Preheat oven to 400 degrees.  Cover a baking sheet with foil or parchment paper.  Spray with cooking spray.

Spray the potatoes with cooking spray and toss with seasoning.

Spread in single layer on baking sheet and baked for 30-40 mins, flipping half way through.

Crash-hot Potatoes (2 Points Plus)

Serves 3

12 small, round potatoes
1 tsp extra virgin olive oil
1 tsp sea salt
freshly ground black pepper
1 tsp dried Chives
Heat oven 450C .

Don’t peel the potatoes. Place them a pot of salted water, bring to the boil, and simmer for around 15 minutes until they’ll take a skewer without too much resistance. They should be just about cooked, without being soft.

Drain, and arrange on a cookie sheet lined with baking parchment and lightly sprayed with cooking spray.

Use a potato masher to squash each potato flat, until it is twice its original diameter almost looks like a cookie on the sheet!

Crash Hot Potatoes

Drizzle with olive oil and sprinkle with salt and pepper and dried Chives. I think you could use any herb you like here to compliment your main dish

Bake on the top shelf of the oven for 20 to 25 minutes until crisp and golden. Serve hot.

Day ?

Well the only problem with starting with Day 1 etc, is that as I had a break away at the weekend. I think my entry on Thursday before I left was Day 13. So do I start up today with the day it should be or do I come up with some new title for my daily blog? I will have to think on that one …..

Since getting back I have been super busy at work and at home, so have not really got back into a proper eating plan, which I like to have.

On the way home from work tonight, I stopped and picked up some fresh produce. There was nothing in the fridge after the weekend away and just haven’t had time to get anything in.

A few weeks ago on Danica’s Daily she posted a recipe for Lasagna Cups which I have been anxious to try. They looked like the perfect lunch for me. Pack one or two together with a salad and there you have a nice lunch. I bought the Wonton Wrappers last week in readiness and never made them. So tonight I picked up the Ricotta cheese which was the only missing ingredient and made them.

If you are looking for a yummy yummy appetizer, or even to serve for dinner with a salad you have simply got to try these ….

Lasagna Cups (2 Points Plus)

Makes 12 Lasagna Cups

  • 1 1/2 cups Marinara Sauce (I used the Paul Newman variety)
  • 3 ounce fresh spinach, minced
  • 1/2 cup carrots, minced
  • 1 garlic clove, minced
  • 1 cup fat free ricotta cheese
  • 1 egg white
  • 1 tsp Italian seasoning
  • Dashes of sea salt, black pepper and crushed red pepper flakes
  • 8 oz low-fat mozzarella cheese
  • 1 oz parmesan, grated
  • 24 small square wonton wrappers
  • Fresh basil leaves for garnish, optional


  1. Preheat oven to 375 degrees. Place a 12 cup standard muffin tin on a cookie sheet and spray each cup with nonstick spray. Set it aside.
  2. In a medium bowl, combine spinach through crushed red pepper flakes.. Mix well then stir in 1/3 cup of the mozzarella. Set aside.
  3. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, ricotta cheese mix and mozzarella cheese. Then, top with a little marinara sauce. Use around 1-2 teaspoons of all the ingredients depending on your personal preference, smoothing the surfaces with the back of a spoon after each addition. Repeat layers ending with marinara sauce. Top with reserved Parmesan and mozzarella cheese.
  4. Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out.
  5. Garnish with basil and serve.

I need to work out the calorie content for these, but Danica has them listed at 2 Points Plus each which is GREAT.

After stocking up the fridge, I am now ready to get back to tracking my daily points.  A few days away and it is so easy to get out of the habit.  As any fellow Weighwatchers will know the only way to suceed is to track what you eat.

    1 tsp of favourite seasoning (I decide this dependent on what I am serving them with)
    Cooking spray

Preheat oven to 400 degrees.

Cover a baking sheet with foil or parchment paper. Spray with cooking spray.

Add egg white to a bowl, add the seasoning of your choice. Beat until frothy and then pour over the potatoes. Toss so that all the potatoes are coated.

Spread potatoes into one layer on the baking sheet trying not to have the fries touch.

Cook for 30-40 mins, flipping halfway through. Remove once crispy and cooked through. Cooking time will depend on the thickness of the fries.

Per Serving: 86 Calories, 1g Fat, 18.7g Carbs, 2.3g Fibre, 3.4g Protein (2 Points+)


Cajun Fries: 1 tbsp (15 mL) Cajun seasoning; 1/4 tsp (1 mL) dried oregano.

Spicy Cheese Fries: 1/4 cup (50 mL) grated Parmesan cheese; 1/4 tsp (1 mL) cayenne pepper.

Sesame Fries: 2 tbsp (25 mL) sesame seeds; 1 tbsp (15 mL) soy sauce; 1/2 tsp (2 mL) dried cumin.

If you break the ingredients down individually for this dessert, then they are only 1 Points Plus each.  But when you punch into the Weightwatchers recipe calculator it makes them 2 Points Plus each because it then calculates the fruit as an ingredient.  The fruit when eaten on it’s own has a zero points value!!!!!!

Makes 12 mini desserts

  • 1 (20oz)  Can Crushed Pineapple with Juice
  • 1 (3oz) Box Sugar Free Vanilla Instant Pudding
  • 1 Can Mandarin Oranges, drained
  • 1 (8oz) container of Cool Whip (or packet of Dream Whip and 1/2 cup Fat Free Milk)
  • 12 Marachino Cherries for garnish

Cut up the mandarin oranges into small bite size pieces.

Mix the orange pieces, pineapple, pineapple juice and instant pudding mix together.

Gently fold in the whipped topping.

Spoon into small dessert dishes over the cake.

Garnish with a marachino cherry on trop.

Can be served immediately or refrigerate for an hour or so.

You can also make these by placing a 1″ cube of pound cake or angel food cake in the dish and then topping with pudding mixture.

Per serving – 69 Calories, 12g Carbs, 1g Fat, 2g Protein, 1g Fibre (2 Points Plus)
