100% Simply Filling

3 Points Plus

Serves 2

  •  2 tablespoons minced fresh basil
  • 1 teaspoon olive oil
  • ½ teaspoon minced fresh garlic
  • ⅛ teaspoon salt
  • 1/16 teaspoon pepper
  • ½ lb cod fillets

Combine first five ingredients; rub onto both sides of fillets.

Heat a sprayed non-stick skillet over medium heat. Cook fillets 2 to 3 minutes on each side or until fish flakes easily with a fork.

  • 1-1/3 cups all-purpose flour
  • 3/4 cup sugar, divided
  • 1/2 cup packed brown sugar
  • 3/4 cup cold butter, cubed
  • 1 cup old-fashioned oats
  • 1/2 cup chopped pecans
  • 1 package (8 ounces) cream cheese, softened, cubed
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cardamom
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 teaspoon vanilla extract
  • 3 eggs, lightly beaten

•Preheat oven to 350°. In a small bowl, mix flour, 1/4 cup sugar and brown sugar; cut in butter until crumbly. Stir in oats and pecans. Reserve 1 cup for topping.

•Press remaining crumb mixture onto bottom of a greased 13×9-in. baking pan. Bake 15 minutes.

•In a small bowl, beat cream cheese, spices and remaining sugar until smooth. Beat in pumpkin and vanilla. Add eggs; beat on low speed just until blended. Pour over warm crust; sprinkle with reserved crumb mixture.

•Bake 20-25 minutes or until a knife inserted near the center comes out clean and filling is set. Cool on a wire rack. Serve or refrigerate, covered, within 2 hours. Cut into bars. Yield: 2 dozen.

1 bar equals 196 calories, 12 g fat (6 g saturated fat), 52 mg cholesterol, 80 mg sodium, 21 g carbohydrate, 1 g fiber, 3 g protein.

Serves 3

  • 2 Tbsp Soy Sauce
  • 2 tsp Maple Syrup
  • 3 x 3oz boneless Pork Loin Chops

Preheat grill to medium-high heat.

Combine soy sauce and syrup.  Add pork chops and let marinade for 10 mins.

Remove pork chops from marinade.

Microwave marinade on high for about 1 minute until slightly boiling.

Grill pork chops 4 mins on each side or until cooked, basting often with reserved marinade.

Warm Ranch Potato Salad – 100% Simply Filling (3 Points Plus)

Serves 6

  • 28oz bag Honey Gold Small Potatoes
  • 1/4 cup diced Red Onion
  • 2 Hard Boiled Eggs, Chopped
  • 1/4 cup Kraft Light Ranch Dressing
  • 1/4 cup Fat Free Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Bring potatoes to a boil; reduce to a simmer and cook 10 to 15 minutes or until potatoes are tender. Drain potatoes.

Cook up two hard boiled eggs.

Combine Ranch dressing and milk; pour over potatoes while potatoes are still hot. Add diced onions and eggs.  Season with salt and pepper.

Divide into 6 servings. (Save 3 servings for another day)

Denver Egg Mug Omelet

Serves 1

  • 3 Egg White
  • ¼ cup Green Pepper, diced
  • 2 Tbsp Onions, diced
  • 1oz Deli Ham, chopped
  • 2 Tbsp Reduced Fat Mozzarella Cheese
  • Salt and Pepper to taste

Spray the inside of a mug with cooking spray.

Mix together all of the ingredients and add to mug.

Microwave on high for 1 ½ mins.

Wrap everything in a wrap! (I used a Flatout 2 Point Wrap with a little Salsa making a total of 5 Points+)

Spinach Artichoke Soup (3 Points Plus)

Serves 3

  • 5oz Frozen Spinach
  • 1 cup Artichoke Hearts (thawed frozen or canned)
  • 2/3 cup 0% Greek Yoghurt
  • 1 Garlic Clove, chopped
  • 1/3 cup Parmesan Cheese
  • 2/3 Onion, chopped
  • 2 cups Chicken Broth
  • Salt & Pepper

Saute the onions in a large pot sprayed with cooking spray, until they become translucent.  Add the garlic and continue to saute for 1-2 mins.

Spinach Soup 1

Add the spinach and artichoke hearts and saute for an additional 2 mins until spinach begins to wilt.

Spinach Soup 2

Add chicken broth and salt and pepper to taste.  Simmer for 10 mins.

Stir in greek yoghurt and parmesan cheese.  Let cool for 5-10 mins and add to a blender.  Blend to desired consistency.

2 Servings for lunch today

1 serving is for lunch during the week
