I find the only way for me to keep on track for the day is to have a plan ready, so this is my plan for today.  I sat this morning and calculated out my movie popcorn and frozen yogurt from last night and it came to 24 Points+.  I have always had a hard time with those 49 Weekly Points Allowance.  I try not to use them, although Weightwatchers make a point of saying don’t be scared of them!!  I know my own body though and if I was to eat those extra 49 Points+ every week I know I would not lose weight.  When I was younger yes, but not now.  I noticed particularly when I turned 50 that my metabolism seemed to change.  Now when I follow the plan I will usually see a loss of 0.l5 pounds per week.  A great week is a pound or more!!!  So it is a long slow process for me to get back to my Lifetime Weight again!!  My advice therefore is you are struggling with your weight, do it while you are young!!!!

When I reached my Lifetime membership for Weightwatchers about 15 years ago it was much easier than this time.  When we moved from England to Canada, I don’t even know why I allowed it to happen but I put on a lot of weight and January 1, 2012 decided enough was enough and decided to do something about it.  Fitness was my first goal which I worked on for several months and slowly introduced healthier eating into the mix.  I try to think more about what I am eating and the choices I am making instead of the weight aspect of it!  By doing that I really have found that I make better choices.

LUNCH – Quesadilla (9 Points+)

DINNER – Hashbrown Quiche (5 Points+), Green Salad(0 Points+), 1 Tbsp Light Dressing (1 Points+)

BREAKFAST

Strawberry Protein Smoothie (5 Points Plus)

I always enjoy a Smoothie for breakfast.  I like to add some Protein powder, I find protein is the key to a breakfast that keeps me going until lunchtime.  Into the blender I put 5 ice cubes, handful frozen strawberries (0 Points+), 1/2 cup Fat Free Milk (1 Points+), Scoop Protein Powder (2 Points+), probiotic Strawberry Yoghurt (2 Points+).  Push the button and all done.  I had to let it sit for a while, it looked more like Strawberry Ice Cream!

LUNCH

Quesadilla (9 Points+)

I used one 2 Points+ Flatbread (I always use the Flatout brand that I get when we go down to the States shopping).   Top one half with the 1 cup of roasted vegetables which was set aside whilst making the Roasted Vegetable Calzone yesterday.  All these extra portions work out so great for lunches!  Remove chicken meat from one of the chicken thighs that I set aside from last night’s Slow Cooker Chicken Cacciatore.  Sprinkle with 1/4 cup Shredded Low Fat Mozzarella Cheese, fold over to form Quesadilla.  Heat through in non stick skillet sprayed with cooking spray.  Turn over and cook on other side.  Nice simple but filling lunch using leftovers!

Sunday is family dinner day.  I fixed a Pasta Bake for the family and then made the Hashbrown Quiche.  A portion of this I ate at dinner, a portion I have set aside for lunch on Tuesday and my daughter-in-law took home the other portion for lunch for herself during the week.

For dessert I made some of the Babycakes Cupcakes.  These are not as large as a regular cupcake but not as small as using a mini muffin tin.

It makes 8 cupcakes in 6 mins.  It is the fabulous little gadget.  The grandkids love cupcakes.  This week I tried Marbled Swirl Cupcakes.  They were very good.  I took some to church this morning to share with the little ones in Nursery where I work.  Then the rest of them will go to work tomorrow, that way there are no more temptations left in the house!!!!!

Marbled Swirl Cupcakes

Makes 28

  • 2oz Unsweetened Chocolate, coarsely chopped
  • 1.5 cups Flour
  • 1.5 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Sugar
  • 1/3 cup Unsalted Butter, softened
  • 2 Large Eggs at room temperature
  • 1/4 cup 0% Greek Yoghurt
  • 1 tsp Vanilla Extract
  • Vanilla Buttercream Frosting – see below
  • Chocolate Drizzle – see below

Place chocolate in a medium microwave safe glass bowl.  Microwave on high in 30 second intervals, stirring after each, until melted.  Stir until smooth.  Let cool to room temperature.

In a small bowl, whisk together flour, baking powder, baking soda and salt.  Set aside.

In a large bowl, using an electric mixer on medium-high speed, beat sugar and butter for 1-2 mins or until fluffy.  Add eggs, one at a time, beating well after each addition.  Beat in yoghurt and vanilla.  Add flour mixture alternately with milk, making three additions of flour and two of milk and beating on low speed until smooth.

Spoon one cup of batter into melted chocolate.  Stir until blended.

Using a spoon drop dollops of chocolate batter on top of the white batter.  Swirl with the tip of a knife just once or twice, do not swirl completely or blend.

Place paper liners in well.  Fill each well with about 1.5 Tbsp batter.  Bake in Babycakes Cupcake Maker for 6 mins or until tester inserted in the center of a cupcake comes out clean.

Transfer to a wire rack to cool.

Frost with Vanilla Buttercream Frosting then drizzle with Chocolate Drizzle.

Vanilla Buttercream Frosting

  • 1/4 cup Unsalted Butter, softened
  • 1.75 cups Icing Sugar
  • 2-3 Tbsp Milk
  • 1 tsp Vanilla Extract

In a small bowl using an electric mixer, beat Butter until creamy.  Add icing sugar, milk and vanilla.  Beat until light and fluffy.

Chocolate Drizzle

  • 1/4 cup Semisweet Chocolate Chips
  • 2 Tbsp Unsalted Butter

Place chocolate chips and butter in a small microwave safe glass bowl.  Microwave on High for 30 secs.  Stir.  Microwave on High for 15 second intervals, stirring after each, until melted and smooth

Sunday – National Anthem Day

Apparently today is National Anthem Day in the US.  Coming from England and living in Canada I feel like I have two national anthems.

Back in the summer when the Queen’s Jubilee was celebrated I felt very patriotic!!

“God save our gracious Queen Long live our noble Queen, God save the Queen: Send her victorious, Happy and glorious, Long to reign over us: God save the Queen.

On July 1st Canada Day we usually sing the National Anthem on the nearest Sunday and I always feel a surge emotion.  I love the words of the Canadian National Anthem.

O Canada! Our home and native land! True patriot love in all thy sons command.
With glowing hearts we see thee rise, The True North strong and free!
From far and wide, O Canada, we stand on guard for thee.
God keep our land glorious and free! O Canada, we stand on guard for thee.

Anyway back to my post about my nutritional habits.

BREAKFAST

1/2 cup Prune Juice (2 Points Plus)

This morning was a little rushed, I had a couple of last minute things to get ready for my Nursery class at church, so I just literaally had my daily dose of Prune Juice!

LUNCH

 Carnitas Burrito Bowl (6 Points Plus)

 Came in from church and lunch was so easy to throw together.  I just put some lettuce in a bowl, with a portion of the Carnitas that I made yesterday.  Few other vegetables I had in the fridge with a nice dollop of Salsa.  Yummy!!  These are my fave kind of lunches.  Something really filling and nutritional but so simple.

DINNER

Sweet Potato Shepherd’s Pie (8 Points Plus)

Pumpkin Maple Cupcake (4 Points Plus)

Fresh Fruit – Pineapple, Banana and Blueberries (0 Points Plus)

I really enjoyed the Shepherd’s Pie, the Mashed Sweet potato and Cauliflower on the top was really, not as heavy as regular mashed potato.

Yesterday evening I made some cupcakes using my Babycakes maker and one of their recipes.   I made 21 cakes with the batter which calculated out at 4 Points Plus per Cake, if it had been 22 cakes then it would have been 3 Points Plus per cake!!!!!!!

These could also be made in regular mini muffin pans, The Babycakes are somewhere between the mini cupcakes and regular cupcakes.  So I am sure the mini ones would definitely be 3 Points Plus, or depending on how many you make, maybe even 2 Points Plus.  The calculation includes the frosting as well.

A mini cupcake liner is 1 1/4″ diameter, a standard cupcake liner is 2″ diameter and the Babycakes are 1 1/2″diameter.

Sweet Potato Shepherd’s Pie (8 Points Plus)

Serves 3

  • 1 Sweet Potato, peeled and chopped
  • 1 small head of Cauliflower, chopped (save ½ cup for tomorrow’s dinner)
  • 1/8 cup Fat Free Milk
  • 1 Tbsp Low Fat Sour Cream
  • Salt and Pepper
  • 1/2 lb Lean Ground Turkey
  • ½ Medium Onion, chopped
  • 1 Celery Stalk, chopped
  • 1 Carrot, chopped
  • ½ tsp Vegetable Oil
  • 2/3 cup Green Beans
  • 1 tsp Worcestershire Sauce
  • 2 tsp Flour
  • 1 sprig Fresh Thyme, chopped
  • Salt and Pepper
  • 2/3 cup Creamed Corn

Preheat oven to 425 degrees.

Bring a large pot of salted water to a boil.  Add the potatoes and cauliflower and cook for 8-10 mins until soft.  Add to a blender with 1/8 cup fat free milk, sour cream, salt and pepper to taste.  Blend to desired consistency.  Add some of the cooking liquid if you need more liquid.

In a sauté pan, brown the ground turkey.  Add salt and pepper to taste.  Remove from pan and set aside.

Add the vegetable oil, onion, carrots and celery.  Cook for 5-7 mins or until everything begins to soften up.

Add the cooked ground turkey, green beans, chicken broth, Worcestershire sauce and thyme.  Bring to a simmer.  Season with salt and pepper.

Stir in the flour and let simmer for 10 mins.

Spread the turkey mixture into your baking dish.  Pour the creamed corn over the top and spread evenly.  Gently spread mashed potatoes across the top.

Bake for 15-20 mins until bubbling.  Broil for last 3-4 mins to brown the top.

Two servings are for dinner.  One additional serving is for lunch on Tuesday.

Pumpkin Maple Cupcakes (4 Points Plus)

Makes 21

  • 1 1/3 cups Flour
  • 1 tsp Baking Powder
  • 1 tsp ground Cinnamon
  • 1/2 tsp ground Nutmeg
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 large Egg, at room temperature
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Maple Syrup
  • 1/4 cup Vegetable Oil
  • 1 tsp Vanilla Extract

In a small bowl, whisk together flour, baking powder, cinnamon, nutmeg, baking soda and salt.  Set aside.

In a large bowl, using an electric mixer on medium-high speed, beat egg, pumpkin, maple syrup, oil and vanilla for 1 min.  Stir in flour mixture.

If desired, place paper liners in wells.  Fill each well with about 1 1/2 tbsp batter.  Bake for 6-8 mins or until a tester inserted in the centre comes out clean.

Maple Frosting

  • 1/3 cup packed brown sugar
  • 1/4 cup unsalted Butter
  • 3 Tbsp Milk
  • 1/2 tsp Vanilla Extract
  • 1 tsp Maple Flavouring
  • 1 cup Icing Sugar

In a small saucepan, combine brown sugar and butter.  Bring to a boil over medium-high heat, stirring constantly.  Boil for 2 mins.  Stir in milk, vanilla and maple flavouring.  Return to a boil, then remove from heat.  Let cool slightly for 3-5 mins

Transfer milk mixture to a medium bowl, and using an electric mixer on medium-high, beat in icing sugar for 30 seconds or until thickened.  Allow to cool and set a little before spreading on cupcakes.

Long Weekend

Back from a great long weekend in Montana.  The only problem with a long weekend away is that it is easy to forget about making simply filling food choices.  Some of them were filling but maybe not quite so simple!!!!!  Yummy nonetheless.

I really like gadgets for the kitchen.

I bought my daughter-in-law a Cake Pop Maker for Christmas and thought about getting myself one.  Then I saw a Babycakes display …..

I am a sucker for cookbooks – so I just had to buy the cookbook that went with it!

There are recipes for cupcakes, tarts, pies and more.  Cannot wait to try something out!  Hoping that because they are called snack size that the calories / weight watchers points won’t be too bad!!!

Today I am trying to have somewhat of a cleanse.  So I had a Protein Shake for breakfast and another for lunch.  Tonight is going to be some chicken and salad.

I wore my Fitbit over the weekend.  I didn’t manage to get a steps badge on Sunday, other than church it was a lazy lazy day!!!  We were on the 4th floor in the hotel, so I did the stairs instead of the lift.  Now that deserves a pat on the back!!

So tonight I am going to work out my menu for the balance of the week.

Tonight is my Zumba class too, so that should help somewhat with the over indulgence at the weekend!!!
