WEEK 2 – DAY 2 – START OF THE LONG WEEKEND!!

My 5 year old granddaughter slept over Friday night and we had a busy day on Saturday.

The long weekend in May is usually when I get flowers planted in my garden and start tidying it up after the winter – a long winter it was too!!

My husband had built a 16′ x 2′ planter along the base of our deck, so today the soil arrived and I went and got the flowers.

So pretty much today I forgot all about food!!!! So what did I have ..

Breakfast 1.4 Carbs
Sausage, Spinach and Feta Bake

In fact while breakfast was cooking I made up another batch for next week.  I did mine in a 9 x 13 pan and cut into 12 squares.

Morning Snack 0 Carbs

Opened the fridge and grabbed 3 slices of cooked bacon – how easy was that!!

Lunch 2 Carbs

Driving to pick up my flowers I ate an Atkins Endulge Caramel Nut Chew Bar

Dinner 3 Carbs

I was in Walmart and decided to get a burger to eat on the way home.  I ordered a Quarterpounder with Bacon & Cheese with no bun.  I had never done this before and it came in a little platter box with a knife and fork.  This would have been great with a side salad, but unfortunately it was an express so no salads!!

Last Day of Week One Low Carb

After having a mid week weigh (just to see) I knew this low carb was going to give me good results on the scales!  I can honestly say that I haven’t been hungry this week.  This obviously wasn’t a 100% stick to it week, as Day 3 was Mother’s Day.

My daughter is getting married on June 6th and I am making two Flower Girl dresses.  I left work a little early to get working on them!!  The cutting out part is my least favorite thing!  I managed to get the main dresses which are in a crepe fabric done.  I still need to cut out the lining and the chiffon overlay for the skirts.

I didn’t spend the whole evening on it, as I had my Zumba class at 8pm, but at least I made a start.

So what did I eat …. one thing I have noticed this past few days is that my afternoon sugar craving has gone.  The first few days I also noticed that I had a headache in the afternoon.

1/2 cup Egg Creations Southwest, 2 slices of bacon

2 cups Romaine Lettuce, 1/2 cup diced cucumber, 2 slices of bacon, 2 Tbsp Ranch dressing

1/3 cup Easy Egg Salad, 3 Celery Stalks

Dinner 6.5 Carbs

4oz Salmon Fillet, 1 cup Broccoli Florets, Salad (2 cups Romaine Lettuce, 1/2 roma tomato diced, 1/2 cup diced cucumber), 2 Tbsp Ranch Dressing

Evening Snack 2 Carbs

Atkins Endulge Caramel Nut Chew Bar

Daily Total:

Low Carb Week One Almost Done …

I am really looking forward to weigh day on Friday.

It was a beautiful day today – sunny and warm.  So I headed out just before lunch and did a 50 minute walk, that always helps with the step count!

I was really pleased with myself last night. We had an activity with the girls that I work with in their youth group. Refreshments after were Turtle Brownies with Ice Cream and Caramel Sauce and I didn’t have any. The challenge for me every week is the weekend, so I hope I can get through it okay!!!!

I have been following the food ideas on the blog I Breathe I’m Hungry. She has the most amazing low carb recipes.

Breakfast 1.4 Carbs
Sausage, Spinach & Feta Bake with two slices of bacon

Morning Snack 4.7 Carbs
1/2 Red Bell Pepper (sliced) with 1 Tbsp Renee’s Southwest Ranch Dip

Lunch 5.7 Carbs
Egg Salad, 2 cups shredded Romaine Lettuce, 1/2 cup diced cucumber, 1 diced Roma Tomato and 1 Tbsp Renee’s Southwest Ranch Dressing

Afternoon Snack 1.4 Carbs
Sausage, Spinach and Feta Bake

Dinner 6.3 Carbs
4oz Salmon Fillet, 2 cups Broccoli (steamed), 1/2 oz grated cheese, Easy Cheesy Cauliflower Gratin (that was my last piece)

Evening Snack 2 Carbs
Atkins Endulge Caramel Nut Chew Bar

Daily Totals 21.5 Carbs / 1,478 Calories

FitBit Stats:  10,735 Steps / 7 Stairs

STILL DOING GOOD….

I am quite surprised how well this low carb eating is going.  I haven’t felt hungry and I am enjoying what I eat!

Before work I made up some Egg Salad, there are 4 servings, so that will do me for lunch or snack for a few days.

Breakfast 2.9 Carbs

Sausage, Spinach & Feta Breakfast Bake, 1/2 cup unsweetened Almond Milk

Mid  Morning 2.6 Carbs

1 cup Broccoli Florets, 1 Tbsp Renee’s Southwest Ranch Dip

Lunch 1.5 Carbs

Simple Egg Salad,  3 Romaine Lettuce Leaves, 2 slices of cooked bacon ( I put the bacon and egg on the lettuce and ate them like wraps – yummy!)

Afternoon Snack – 2.7 Carbs

24 Almonds

Dinner 8.9 Carbs

4oz Steak with a steak spice rub, Side Salad (2 cups shredded Romaine, 1/2 cup diced cucumber, 1 roma tomato diced topped with 2 Tbsp Three Cheese Ranch) and Easy Cheesy Cauliflower Gratin (already had a portion in the fridge, so just needed to warm up)

1 Sugar Free Jello and 1 Tbsp Whipping Cream

Evening Snack – 2 Carbs

Atkins Endulge Caramel Nut Chew Bar

The Steak Spice rub was La Grille and I happened to glance at the label before I rubbed it onto the steak.  O Calories but 1 Carb (Interesting!!!!)

Total:  19.6 Carbs

FitBit:  8,899 Steps / 4 Stairs
