Hoping everyone had a lovely Easter weekend.  Mine began on Thursday evening and since that point didn’t get near the computer, so no blogging for me!

The highlight of the long weekend was a trip to Calgary to see Billy Elliott, the Musical. I always enjoyed the movie and was quite intrigued to see how they would manage to turn it into a musical.  Great songs by Elton John.  Really enjoyed it.

With the weekend being busy, I realized that I did not even get near a supermarket, so my fridge now has a shortage of fresh fruit and veg.

Unfortunately Easter Monday is not a holiday here, so it was back to work as normal.

Looking forward to a full month ahead of following the Weightwatchers Simply Filling program and seeing some success on the scales!!!!

Breakfast – 100% Simply Filling

The fridge was somewhat bare, so I had to resort to cereal!!  In the cold cereal department there are really not too many that are included on the Weightwatchers Simply Filling list.  The rule of thumb is no added sugar, fried fruits or nuts with 4g of Fibre or more.  It’s surprising when you start reading the boxes how few choices are available.  The one I have found that falls within these guidelines is the Shredded Wheat with Bran.

Lunch – 100% Simply Filling

Had a bowl of my Split Pea Soup that I made at the weekend.  We had a baked ham the previous weekend, so I always like to make some soup up using the leftover bone.  That together with some Greek Yoghurt and an Apple was a nice satisfying 100% simply filling lunch.

I made up some Pork Milanese (fancy name for breaded pork chops!) and served with steamed veggies and Roasted Sweet Potato Fries.

Pork Milanese – 100% Simply Filling – 7 Points Plus

Pork Milanese – 100% Simply Filling – 7 Points Plus

Serves 2

  • 2 boneless, lean pork chops-4oz each
  • 1 egg
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/8 cup milk
  • 1/4 cup seasoned breadcrumbs
  • 1/2 Tbsp Vegetable Oil

Place pork between two sheets of waxed paper and pound until twice the size.  Season with salt and pepper.

Whisk together egg,  mustard, salt, pepper and milk.

Spread breadcrumbs in a shallow dish.

Dip pork chops into egg mixture and then breadcrumbs.

Heat oil over medium-high heat.  Cook for 3-4 mins per side or until cooked through.
