Braised Pork Chops over Brown Rice

100% Simply Filling

8 Points Plus

2 Servings

  •  ⅓ cup uncooked brown rice
  • ½ lb center cut pork rib chops, trim all fat
  • 2 teaspoons vegetable oil
  • 2 tablespoons water
  • 2 teaspoons brown sugar
  • 1 teaspoon red wine vinegar
  • 1 teaspoon Worcestershire
  • ¼ teaspoon garlic salt
  • ¼ teaspoon Dijon mustard

Prepare rice according to package directions to yield 1 cup cooked rice.

Brown chops in oil in a non-stick skillet over medium heat.

Combine remaining ingredients; pour over chops.  Reduce heat, cover and cook 20 minutes or until tender.

Remove chops from pan; cook sauce 5 minutes more to reduce sauce. Pour sauce over chops and divide into 2 servings.

  •  2 tablespoons minced fresh basil
  • 1 teaspoon olive oil
  • ½ teaspoon minced fresh garlic
  • ⅛ teaspoon salt
  • 1/16 teaspoon pepper
  • ½ lb cod fillets

Combine first five ingredients; rub onto both sides of fillets.

Heat a sprayed non-stick skillet over medium heat. Cook fillets 2 to 3 minutes on each side or until fish flakes easily with a fork.

Serves 4

  • 4 cups coleslaw mix
  • 1 diced mango
  • ½ cup diced fresh pineapple
  • 3 tablespoons light mayonnaise
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 4 teaspoons chopped cilantro

Toss all slaw mix ingredients together and divide into 4 servings

Serves 3

  • 2 Tbsp Soy Sauce
  • 2 tsp Maple Syrup
  • 3 x 3oz boneless Pork Loin Chops

Preheat grill to medium-high heat.

Combine soy sauce and syrup.  Add pork chops and let marinade for 10 mins.

Remove pork chops from marinade.

Microwave marinade on high for about 1 minute until slightly boiling.

Grill pork chops 4 mins on each side or until cooked, basting often with reserved marinade.

Serves 6

  • 28oz bag Honey Gold Small Potatoes
  • 1/4 cup diced Red Onion
  • 2 Hard Boiled Eggs, Chopped
  • 1/4 cup Kraft Light Ranch Dressing
  • 1/4 cup Fat Free Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Bring potatoes to a boil; reduce to a simmer and cook 10 to 15 minutes or until potatoes are tender. Drain potatoes.

Cook up two hard boiled eggs.

Combine Ranch dressing and milk; pour over potatoes while potatoes are still hot. Add diced onions and eggs.  Season with salt and pepper.

Divide into 6 servings. (Save 3 servings for another day)

Serves 4

Quick Spaghetti Sauce

  • 8oz High Fibre Spaghetti
  • 1 tsp olive oil
  • 1/2 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 garlic cloves, minced
  • 1/2 Tbsp Italian seasoning
  • 1lb lean ground beef
  • 1/4 tsp salt
  • 16oz can crushed tomatoes
  • 2 Tbsp parsley, finely chopped
  • 1/4 cup Parmesan cheese

Cook pasta according to package directions.

While the pasta is cooking, heat the olive oil in a skillet over medium heat.  Add the onion, carrot, celery and garlic.  Cook for 5-7 mins until onion is tender.

Add the beef, Italian seasoning and salt.  Brown the beef for 5-7 mins until it isn’t pink.

Add the tomatoes and simmer for 5 mins.

Stir in parsley and serve over cooked pasta.

Sprinkle with parmesan cheese.

Tomato Ricotta Pie

Ingredients

  • 1/4 cup fat free milk
  • 1 Tbsp cornstarch
  • 15 oz part skim ricotta cheese
  • 4 eggs
  • 1/4 grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup chopped basil
  • 1 lb tomatoes sliced thin

Instructions

  1. Preheat oven to 400 degrees
  2. Whisk together the cornstarch and milk – set aside
  3. Stir together ricotta, eggs, parmesan, salt, pepper and basil
  4. Whisk in milk and cornstarch
  5. Pour into a 10 inch pie plate.  Arrange tomatoes on top.
  6. Bake for 40 mins or until cooked completely.

Honey Mustard Broccoli & Apple Salad

Ingredients

  • 1 1/2 Tbsp whole grain mustard
  • 1 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • 1/2 Tbsp olive oil
  • salt and pepper to taste
  • 1/2 lb broccoli, shopped
  • 1 apple, thinly sliced
  • 1 Tbsp roasted salted sunflower seeds

Instructions

  1. Blanch or steam broccoli for a few ins until bright green and just tender.  Run under cool water immediately and let drain.
  2. In a large bowl whisk together mustard, honey, vinegar, olive oil, salt and pepper.
  3. Add the broccoli, apples and sunflower seeds.  Toss together and let chill for at least 15 mins before serving.

Serves 1

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup water
  • 1/2 cup fat free milk
  • 1 peach, chopped
  • 1/4 cup blueberries
  • 1/8 tsp cinnamon
  • pinch of salt

Instructions:

  1. Add oats, water, milk and peach to a pan.  Cook until oats begin to bubble then stir until oars are cooked and creamy, about 3 mins.
  2. Remove pan from heat and stir in blueberries, salt and cinnamon.

Black Bean Corn Salad

Serves 3

Ingredients

  • ¼ red onion, chopped
  • 1 garlic clove, chopped
  • 1/2 tbsp lime zest
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 2 Roma tomatoes, chopped
  • 1 red pepper, chopped
  • 1 cup black beans
  • 1 corn on the cob or 1 cup frozen corn
  • ¼ cup cilantro, roughly chopped
  • 2 tsp. olive oil

Instructions

Combine everything in a bowl and let sit in the fridge for at least 1 hour.
